So here is my first demonstration 😁. * Clarified Strawberry Juice * - Chop tops off of strawberries (keep tops aside for another use) - Blend whole strawberries - Weigh the resulting purée and add 0.25% of pectinex by total weight of purée (e.g. per 1000g purée add 2.5g pectinex) - Blend again - Sit for 1 hour to let the pectinex break down the purée - Strain - Add 10% by weight of sugar
